We stirred the lees and inoculated 20% of barrels for MLF
as well as aromatic violet
The wines are aromatic
the lion’s share of this cuvée is drawn from a parcel of Kimmeridgian-based soil
Mount Avoca 'Moates Lane' Shiraz chardonnay we have been working towardsSourced from 30 plus year old Pyrenees Shiraz Vineyards. Fermented on skins in small open fermenters and stainless steel tanks for 8 to 10 days. MLF was encouraged on skins and completed in tank prior to aging in French and American oak barrels.
